Ingredients
- 15 extra-large white mushrooms, caps and stems separated
- 4 tablespoons extra virgin olive oil
- Cooking spray
- 3/4 pound chorizo sausage
- 3/4 cup minced scallions, white and green parts (6 scallions)
- 2 teaspoons minced garlic (2-3 cloves)
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2/3 cup panko bread flakes
- 1/3 cup freshly grated Parmesan cheese
- 2½ tablespoons minced fresh cilantro
Directions:
Preheat the oven to 325 degrees. Trim the mushroom stems and chop them finely. Set aside. Place the mushroom caps in a shallow bowl and spray with cooking spray making sure you cover the top and bottom of the mushroom. Set aside. Space out the mushroom caps evenly on a baking sheet, upside down and bake it for 2 mins. Take it out of the oven and turn them around so the other side gets brown as well, bake it for another 2 mins. Set aside.

Heat 4 tablespoons of olive oil in a medium skillet over medium heat. Add garlic and sauté for a minute; now add the sausage, crumbling it as you sauté it. Cook the sausage for 8 to 10 minutes, stirring frequently, until it’s completely browned. Add the chopped mushroom stems and cook for 3 more minutes. Stir in the scallions, salt, pepper, and cilantro and cook for another 2 to 3 minutes, stirring occasionally. Take it off the heat and cool slightly. Spoon a generous amount of the sausage mixture and then bread crumbs on top of each mushroom. Top each mushroom with a sprinkle of parmesan cheese making sure it’s fully covered. Bake for 20 minutes until the stuffing is browned and crusty and the cheese is melted and gooey. Enjoy!
Note
- Make sure you have a large baking dish that is enough to hold all the mushrooms in a snug single layer.
- Make sure the casings are removed from the sausage.

I love this recipe because of the combination of the ingredients that I used. Garlic, scallions, parmesan cheese, cilantro, and breadcrumbs what a mix match, mouthwatering! It is very hard to stop eating them! They are a great option when you are entertaining as they can be prepped ahead of time.
