With fresh ingredients and good combination skill, one can create a healthy bowl, try out this recipe!

Ingredients:

  • Brown Rice- Cooked Rice, ¾ cup
  • Corn- ½ cup caramelized recipe(see recipe below)
  • Butter-2 tbsp.
  • Garlic-1/2 tbsp.
  • Salsa- ¼ cup (see recipe below)
  • Red onion- ½, Tomato- 1 small Roma tomato, Jalapeno- 1, lime juice-3 tbsp.
  • Black Beans- ¼ cup
  • Quinoa- cooked Quinoa, ¼ cup
  • Grape tomatoes- 6 of them cut into halves
  • Avocado- 1 full ripe- sliced
  • Cilantro- 3 tbsp.- chopped
  • Salt & Pepper- according to taste

Corn: I love to caramelize the corn with garlic; it just gives a nutty, roasted flavor and it’s divine! In a small sauté pan over medium heat, melt the butter and add fresh garlic and sauté, stirring, for 1 minute. Add corn and sauté it for a couple of minutes under medium heat making sure, it doesn’t burn. Keep cooking under it turns golden and brown; after it is caramelized add salt and pepper. Let it cool for a couple of minutes before you add it to your bowl.

Salsa: Finely dice tomatoes, red onion, and jalapeño. Combine in a large bowl and add lemon juice, salt, and pepper. Usually, I add Cilantro as well but as we have added in our main dish so I feel there is no need to add in the salsa.
Tip: Let the salsa sit for an hour (room temperature or chilled) for the flavors to combine.

Directions: Take the brown rice and put in the bottom of a bowl, now top it with caramelized corn, quinoa, black beans, grape tomatoes, avocado, salsa and sprinkle with fresh cilantro, salt, and pepper and mix it nicely. If you want you can have plain Greek yogurt with it, it gives a great touch with all the ingredients in this bowl.
